Biography

Dr. Craig R. Marshall is a Teaching Assistant Professor in the College of Business at East Carolina University, where he teaches courses in restaurant management, hospitality facilities, cost control, and wine and beverage management within the School of Hospitality Leadership.

He holds a Doctor of Business Administration in Strategy and Innovation from Capella University, an MBA in Finance from Strayer University, a B.S. in Hotel, Restaurant, and Tourism from East Stroudsburg University, and an A.S. in Culinary Arts from Johnson & Wales University.

Before entering academia, Dr. Marshall spent over a decade in hospitality leadership, serving as a General Manager for Sodexo Healthcare and Corporate Services, where he managed multimillion-dollar foodservice operations and led numerous training initiatives. He also brings experience from the financial sector, having worked with USAA Insurance and T. Rowe Price in financial and customer service roles. In addition to his academic post, Dr. Marshall is the co- owner and operator with his wife Lisa of Nothing Bundt Cakes in Greenville, NC, where he combines entrepreneurial leadership with real-world hospitality management.

Dr. Marshall’s research interests focus on workforce issues in the hospitality industry, including talent recruitment, employee well-being, and sustainability practices. His published works include articles in the International Hospitality Review and the International Journal of Tourism & Hotel Business Management. He has presented research at regional and international conferences, earning recognition such as the Best Faculty Lead Abstract Award from the Southeastern, Central, and South America Federation Conference.
